  1. Hi Lisa! I'm finally back posting recipes again and this week I shared my Carrot Cake Muffins. This recipe is gluten free, but you can use "regular" flour if you don't have issues with gluten. These muffins are nice and moist with the addition of 3 cups of shredded carrots plus pineapple, raisins and coconut. Yum!
