Carrot Fries
Fries made out of carrots? Yup. I first saw these on Pretend Chef's blog and couldn't wait to try them out for myself.
I've never been a big fan of eating carrots. Oh, I'll eat them because I know I should, but it's never been something I savored. Until now. The carrots are just deliciously tender and the roasting process adds this lovely char to them that I find simply irresistible and flavorful.
I did change the recipe a little. Instead of oil, I spray them with PAM cooking spray so that they're fat free. I also sprinkled them with some freshly ground black pepper for a nice little kick and omitted the salt (believe me, they don't need it). These are so good that I've been making and eating them several times a week. I'm not even kidding. I hope I don't turn orange.
Carrot Fries (adapted from Pretend Chef)
Carrots, cut into sticks
PAM cooking spray
freshly ground black pepper (to taste)
cumin, curry power, or other seasonings of your choice
salt (optional)
Preheat your oven to 415F. Spray the carrot sticks with the PAM cooking spray and lay them out on a baking sheet. Sprinkle them with the black pepper, salt, or whatever seasonings you choose. Bake for 20-25 min. until tender. You can flip them halfway through if you don't want the char on one side.

I make these all the time with the hubby! We season them either with Lawry's seasoning salt or old bay. It works perfectly with sweet potatoes as well, but we must have this once a week! Yours sound great!
ReplyDeleteWow Lisa those look amazing and I am not normally a big cooked carrot fan (too many Sunday pot roasts with potatoes and carrots as I kid I guess), but am going to try this one. It looks really really good. Oh knows, I might even get my teenager to eat this!
ReplyDeleteHow did you know my morning could use a perking up? Your post just made my day! I am happy that you gave these a try because they are our go to side dish. Itty bitty gobbles these up and the package of carrots disappears. It's such a healthy alternative to potato fries. Your changes sound perfect! I've tried it with the cooking spray before and prefer the olive oil. I could drink olive oil though, haha, just kidding, maybe. Happy you loved them! That was a long time to hold off trying them out. Haha!

ReplyDeleteI just made these and they taste every bit as amazing as I imagined!! I didn't have Pam, so I coated lightly in olive oil and sprinkled with garlic salt. This adds some calories, but I still feel relatively innocent. . . . The combination of savory garlic and sweet carrots is wonderful.
