There are so many posts about recipes and crafts that she made, not by herself, but \u003Ci\u003Ewith\u003C\/i\u003E her children.\u0026nbsp; I can only imagine how much fun they must have together and how much they are learning every day.\u0026nbsp; And, since Danielle herself is a fantastic cook and crafter, you know that they're learning from the best!\u0026nbsp;\u0026nbsp; \u003Cbr \/\u003E\n\u003Cbr \/\u003E\nWhile browsing through her blog, I came across some very yummy recipes that I wanted to try:\u0026nbsp; But, the recipe I decided to go with was her Cinnamon Swirl Pumpkin Banana Bread.\u0026nbsp; It seemed to combine all of my favorites - banana bread, pumpkin bread, and cinnamon bread, all in one.\u0026nbsp; Add in the brown sugar, butter, and yogurt, then beat in the eggs and vanilla.\u0026nbsp; Combine the dry ingredients and add to the wet ingredients, mixing till just combined.\u0026nbsp; Grease 4 mini loaf pans.\u0026nbsp; Fill each pan with 1\/2 c. batter.\u0026nbsp; Sprinkle with 1 Tbsp. of the cinnamon-sugar mixture.\u0026nbsp; Top off with 1\/2 c. of batter and spread evenly.\u0026nbsp; Sprinkle with more cinnamon sugar.\u0026nbsp; At the time, I didn't know of any good recipes for banana cake, so the request went unfulfilled.\u0026nbsp; Recently, I decided to try one of the banana cupcake recipes that was out there on the internet, but it turned out horrible.\u0026nbsp; From the pictures, it looked like the cake would actually come out, dare I say, fluffy.\u0026nbsp; The crumb looked light and most definitely did not resemble banana bread of any sort.\u0026nbsp; So, I decided to give things another go.\u003Cbr \/\u003E\n\u003Cbr \/\u003E\n\u003Cdiv style=\"text-align: center;\"\u003E\n\u0026nbsp;\u003Ca href=\"https:\/\/blogger.googleusercontent.com\/img\/b\/R29vZ2xl\/AVvXsEi6JCYNwWHNl-9b1h-7lVkKk2wbBGwdhDeKbn4Oldbo2O-byJ1OYf6hVhJkdyA6ax9qFSD0l-nSZAErmy_jcF-uyAalijgXq3ikaZZ2wusMx53VYoxbGnVWwnLcPFNq5PwAl0_VKatQqWQ\/s1600\/banana+3%281%29.jpg\" style=\"margin-left: 1em; The cake, yes it was cake, was fluffy and soft and light and super moist to boot.\u0026nbsp; There was also a wonderful banana flavor in every bite. I frostedthese cupcakes off with a peanut butter buttercream and then, since I had a bag of peanut butter Snickers minis (which are totally yum), I decided to top the cupcakes off with them (cause more sugar is always a good thing).\u0026nbsp; Well, I wasn't kidding.  I figured if one cookie cup was good, then two cookie cups put together must be even better.  So, I decided to put a cookie cup into a cookie cup. Then, for the middle cookie cup, I baked some banana chocolate chip cookie dough in mini muffin tins.  The key for these cookie cups is to have two different contrasting flavors that still go together with each other.  After baking them, I made dents in the middles, making sure that there was enough space in the giant cookie cup for the mini cookie cup to fit snugly.  Finally, after cooling them completely, I popped the mini cookie cups into the giant ones and filled the minis with some peanut butter cream cheese frosting. As you know, banana recipes require the bananas to be as ripe as possible.  My problem is that I hate having to wait for days until the bananas reach that point.  My grocery store just saved me the trouble.  And they think I'm doing them the favor by being willing to buy those bananas.\u003Cbr \/\u003E\u003Cbr \/\u003EAnyway, with those bananas ripe for the picking, or rather, overripe and ready to be used, I decided to try these \u003Ca href=\"http:\/\/www.thekitchn.com\/banana-white-chocolate-toffee-88258\"\u003EBanana Cookies\u003C\/a\u003E that I saw on Pinterest.  Up to this point, I had never tried a banana cookie before, only banana breads and biscotti. First of all, I didn't have any toffee bits on hand, so I had to leave those out.  Also, I'm not crazy about white chocolate.  I'm a dark chocolate person all the way.  So, I decided to sub in some dark chocolate chips.  But, I kind of wanted to experiment a little too. I melted down some dark chocolate chips (maybe about 2-3 Tbsp. for the whole recipe).  Then, I spooned it into a small ziploc bag and cut off one tiny corner so that I could use it like a piping bag.  Once the cookie batter was made, I then squeezed in the melted chocolate a little at a time and folded it into the batter with a rubber spatula.  Make sure you do this very carefully because you want it to be chocolate marbled banana cookies, not chocolate banana cookies. Scoop it into a small piping bag, or put it into a small Ziploc bag with a tiny corner snipped off. Keep going until the batter is marbled enough to your satisfaction.  Chill the dough for at least 30 min. in the freezer or 1 hour in the fridge to let the chocolate set up a little. \u003Cbr \/\u003E\u003Cbr \/\u003EDrop in spoonfuls onto a parchment lined baking sheet and bake for 12-15 min. or until edges are golden brown and cookies are set. That means you won't feel guilty from eating all the molten cinnamon chips that are also added into it. Grease and flour a loaf pan.  Stir together the first 8 ingredients.  Mash the bananas then add the oil and eggs and mix thoroughly.  Add the wet ingredients to the dry ingredients and mix well.  Pour the batter into the pan and sprinkle with cinnamon sugar.  Bake until top of loaf is firm to touch, 45-50 min.  Remove from oven and allow to cool in pan for 5 min.
